LEMON CHILLI PRAWNS

As someone who loves spice and strongly believes a dash of lemon juice can fix anything, this easy prawn recipe is one of my favourites. The marinade is a blend of everyday spices, allowing me to substitute the prawns for fish or chicken for quick and inexpensive dinner prep.

INGREDIENTS:


300g prawns/shrimp

3 tsp cumin powder

3 tsp chilli powder

2 tsp salt

2 tsp ground pepper

3 tbsp lemon juice

2 tbsp olive oil

2-3 tbsp butter


METHOD:


- Combine cumin, chilli, salt, pepper, lime juice and olive oil to create marinade

- Marinate prawns in mix and set aside for a minimum of 15 minutes

- Melt butter in a pan over medium heat

- Cook prawns until white with pink streaks, about 3-5 mins

- Garnish with coriander and serve hot
