For the past few weeks I've actively tried to avoid hopping on that quarantine endorsed banana bread train but just like everybody else, I caved. And boy was it worth it. After spending hours trying to choose the perfect recipe (and quite a bit of trial and error), my final pick is definitely going to become one of your favourites.
INGREDIENTS:
1 cup brown sugar
½ cup salted butter
3 ripe bananas
1 large egg
2 tbsp vanilla extract
1.5 cups all purpose flour
1 tsp baking soda
2 tsp cinnamon powder
¾ cup dark chocolate chips or chunks of dark compound chocolate (highly recommend the latter for delicious pools of chocolate)
A pinch of salt
METHOD:
- Preheat oven to 180º C
- Sift together flour, baking soda and salt
- Mix sugar, butter and cinnamon until well combined
- Mash bananas with a fork
- Beat egg and vanilla extract together with a fork and combine with bananas
- Mix banana and egg mixture with butter + sugar
- Fold in the dry ingredients (be sure not to over mix the batter)
- Gently incorporate chocolate chips
- Pour into loaf pan and bake for 60 mins or until golden brown
