One of my favourite childhood memories is going to the mall and getting a free sample chocolate chip cookie from “Cookie Man” and leaving with three bags worth. These crunchy on the outside, chewy on the inside chocolate chip cookies took my right back to that memory. I adapted this recipe from Honeysuckle's perfect chocolate chip cookie recipe, and it left my kitchen smelling just like those car rides home.
INGREDIENTS:
8 tbsp butter
1/4 cup white sugar
3/4 cup dark brown sugar
1 large egg
2 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1 1/3 cups all purpose flour
1 cup large dark chocolate chips
METHOD:
- Preheat oven to 180º C
- Melt and carefully brown the butter (until it looks like so)
- In a mixing bowl, whisk together sugar, egg, butter, vanilla essence , salt, and baking soda until it reaches a slime-like consistency
- Fold in flour and chocolate chips until a well incorporated dough is formed
- Scoop into round dough balls on a parchment-lined baking sheet
- Bake for 12-15 mins at 180º C
- Sprinkle with salt if desired
- Cool before serving
