You know that feeling when you’re craving banana bread but also don’t want to wait an hour for that soft, cinnamon-y deliciousness? This 20 minute pancake recipe is, I promise, perfect to satisfy those cravings.
INGREDIENTS:
1 cup all purpose flour
1 tbsp sugar
2 tsp baking powder or ¼ tsp baking soda and 1 tsp baking powder
½ tbsp vanilla extract
¼ tsp salt
½ tsp cinnamon
½ banana
1 large egg
2 tbsp melted butter
1 cup buttermilk (1 cup milk + 1 tbsp lemon juice or vinegar)
½ cup chocolate chips (or as desired)
METHOD:
- Sift together dry ingredients
- Mash banana with fork
- Whisk in vanilla essence and egg to banana mash
- Mix in melted butter and buttermilk
- Add dry ingredients and mix until you reach a batter like consistency (banana lumps will still exist)
- Mix in chocolate chips
- Melt butter in a pan over medium heat
- Cook the pancakes until golden brown on each side
